Given below are two statements: Statement I: D-(+)-glucose + D-(+) fructose →−H2O\xrightarrow{-\mathrm{H}_2 \mathrm{O}}−H2O Sucrose  sucrose → hydrolysis D−(+) glucose +D−(+) fructose \text { sucrose } \xrightarrow{\text { hydrolysis }} \mathrm{D}-(+) \text { glucose }+\mathrm{D}-(+) \text { fructose } sucrose  hydrolysis D−(+) glucose +D−(+) fructose  Statement II: Invert sugar is formed during sucrose hydrolysis In the light of the above statements, choose the correct answer from the options given below
  1. A
Both Statement I and Statement II are False
  2. B
Statement I is false but Statement II are true
  3. C
Both Statement I and Statement II are true
  4. D

Correct answer: B

  1. Examine Statement I

    Statement I says:

    D-(+)-glucose+D-(+)-fructose→−H2Osucrose\text{D-(+)-glucose} + \text{D-(+)-fructose} \xrightarrow{-H_2O} \text{sucrose}D-(+)-glucose+D-(+)-fructose−H2Osucrose and on hydrolysis, sucrose→hydrolysisD-(+)-glucose+D-(+)-fructose\text{sucrose} \xrightarrow{\text{hydrolysis}} \text{D-(+)-glucose} + \text{D-(+)-fructose}sucrosehydrolysisD-(+)-glucose+D-(+)-fructose

This is not fully correct because although sucrose is indeed formed from glucose and fructose and gives glucose + fructose on hydrolysis, the fructose obtained is D-(-)-fructose, not D-(+)-fructose.

    In fact: sucrose→hydrolysisD-(+)-glucose+D-(-)-fructose\text{sucrose} \xrightarrow{\text{hydrolysis}} \text{D-(+)-glucose} + \text{D-(-)-fructose}sucrosehydrolysisD-(+)-glucose+D-(-)-fructose

    So Statement I is false.

  2. Examine Statement II

    Statement II says:

Invert sugar is formed during sucrose hydrolysis\text{Invert sugar is formed during sucrose hydrolysis}Invert sugar is formed during sucrose hydrolysis

    This is true.

Reason: On hydrolysis, sucrose gives an equimolar mixture of glucose and fructose. Sucrose itself is dextrorotatory, but the resulting mixture becomes levorotatory because fructose has a larger negative rotation than the positive rotation of glucose. This change in sign of optical rotation is called inversion, and the product mixture is called invert sugar.

    Hence Statement II is true.

  3. Conclusion

    • Statement I: False
    • Statement II: True

    Therefore, the correct option is:

B: Statement I is false but Statement II is true.
