  1. Recall the structure and properties of sucrose

    Sucrose is a disaccharide made up of:

    • one unit of α\alphaα-D-glucose
    • one unit of β\betaβ-D-fructose

    These two monosaccharides are joined through a glycosidic linkage.

    In sucrose, the bond is between:

    • C1C_1C1​ of α\alphaα-D-glucose, and
